What we've been up to...

I know it's been awhile since I've updated my blog. Nathan got me a new camera for Valentine's Day. Wasn't that nice of him? I still haven't taken too many pictures with it yet. I did snap a few pictures at the park the other day. We have enjoyed several spring like days this winter. We won't complain!

Brooke entered a project in the Science Fair. There was quite a lot of drama leading up to it. Mostly 3rd grade girl drama. They talked about it in their class and they could have a partner. Partners were changing on a daily basis. Brooke finally decided to do her project by herself because she didn't like the project her friend was going to do. The closer it got to the presentation day, the more Brooke started freaking out. She is very shy, so she was really nervous to present by herself. When the day finally came, she ended up doing just fine. I think it was a good experience for her.

I know you're probably thinking, "that's not a very fancy schmancy board"...believe me, I know. I also have a child who is very hard headed and wanted to do what she wanted to do. She did not want any imput from me, even though I told her there would be many very creative and colorful boards, which there were. Hopefully she knows for next year. At least the judges knew she did it all by herself.

Now we're working on a book report for Rosa Parks and Charlotte has an animal project due in a few weeks as well. I am not looking forward to all these projects in the coming years...

Oh, another thing that has been occupying my time...I am taking a health and nutrition class with a health coach. I am eating VERY healthy, at least trying to. I have not been a good eater in the past few years, and am trying to change that so I can lose weight. Among other things, I have to have 6 serving of vegetables a day. I have gotten very creative. Spinach smoothies, pumpkin smoothies, pumpkin and applesauce mixed together (you should try it, it's good!), roasted zucchini and cauliflower, and many more. I'm sorry to say that the first time I tasted spinach was 4 weeks ago. It's good! Not sure why I waited this long. Anyway, feel free to share any of your healthy recipes with me. I need all the help I can get!! Oh, and I've lost 5 pounds so far. Nathan has been eating better too since he was diagnosed with diabetes and he's lost 16 pounds! He won't try any of my smoothies though! :(

Yummy Spinach!! One of our favorite spinach recipes is http://www.kraftrecipes.com/recipes/spinach-lasagna-rolls-113340.aspx
And bonus, it's a super easy recipe. Check out Kraft's Healthy living section too, lots of healthy recipes that are easy/quick or kid friendly.
